Lasagna soup has been gaining popularity recently and for good reason! This soup has all the flavors, spices, and comfort of lasagna but the simplicity and ease of soup. A couple of viral videos on TikTok are reminding everybody of just how easy and delicious a hearty lasagna soup can really be!

This lasagna soup is made with sautéed onion, garlic, and ground beef in a robust tomato sauce with lasagna noodles and creamy ricotta cheese, mozzarella, and parmesan cheese. It has a rich, homemade meat tomato sauce with Italian spices and three creamy cheeses to make it extra savory.

There are a couple of different versions floating around on Instagram and TikTok, but this is my delicious take on the viral lasagna soup. You are going to love it!

Lasagna soup is a comforting dish that takes inspiration from the classic Italian lasagna but transforms it into a warm and hearty soup.

This popular recipe typically includes the key elements of traditional lasagna, such as ground meat, tomatoes, pasta, mozzarella cheese, and ricotta cheese but in a soup format. It is absolutely delicious and everyone loves it!

It is so much easier to make lasagna soup than it is to make homemade lasagna. Here are the simple ingredients that make this lasagna soup recipe so amazing!

How to make Homemade TikTok Lasagna Soup:

  • Start by sautéing onion in olive oil until it starts to become soft. Add garlic and sauté for only 1 minute. Add ground beef and cook until it browns and cooks through. Season with salt and pepper. 
  • Add crushed tomatoes, chicken broth, and Italian spices. Let it simmer.
  • There are two options for the lasagna noodles. They can be cooked separately according to package instructions or the dried noodles can be added straight to the pot to be cooked in the sauce. I prefer to cook mine separately in another pot and then add my cooked noodles to the soup. If you choose to cook the noodles in the sauce, you will most likely need more chicken broth, about 1 cup. 
  • Make a creamy cheese mixture using ricotta cheese, mozzarella cheese, and Parmesan Cheese. I like to season this mixture with some garlic salt to give it extra flavor. 
  • Serve warm and give each serving a generous dollop of ricotta parmesan mixture.

    Yes! I do suggest cooking the lasagna noodles in another pot but you can skip a step and cook the lasagna noodles right in the soup. I suggest breaking the lasagna noodles into bite-size pieces before adding them to the soup and making sure the soup is hot enough to cook the noodles.

    Can I use fresh herbs in this homemade lasagna soup recipe?

    Absolutely! Fresh herbs makes everything taste more vibrant and fresher. I love to use fresh basil both in the soup and as a garnish as well. Since dried herbs are more concentrated, you need less dried herbs than you do fresh herbs so make sure to add extra fresh herbs to the soup.

    Can I use ground turkey or chicken instead?

    Yes! You can use either ground turkey or chicken in this recipe. You can even use Italian sausage.

    How to store lasagna soup

    You can make this lasagna soup up to 5 days ahead of time, and it can easily be reheated in the microwave or on the stovetop. Store it in an airtight container in the refrigerator.

    Can you freeze lasagna soup?

    Yes! Lasagna soup freezes very well. I suggest putting it into a freezer-safe container to avoid freezer burn. When ready to serve, just let it come to room temperature and then reheat it in a pot on the stove or in the microwave.
